SOUR CREAM ENCHILADAS with HAM

In a medium saucepan over low
heat, melt the butter and add the
flour, stirring constantly, for 3-5
mins. Gradually add the milk and
cook, stirring, until the sauce is
smooth and thick. Add the cheese
and stir until the cheese is melted,
Stir in the mustard, salt, and on-
ions. This sauce may be made ahead
and refrigerated. Reheat before as-
sembling.
To assemble, preheat the oven to
350°. Place one eighth of the ham
mixture near the cdge of each tor-
Ulla and roll Ughtly. Place seam
side down in an oiled baking dish.
Pour the sauce over the enchila-
das, covering them thoroughly. Bake
for 35-40 mins.
