It reheats well, thank God because I'd wait a long time before any of my dolts would try it. 1 scorn squash 1 sweet potato or yam (smallish) butter (about two tablespoons, divided) brown sugar - optional but nice 1 srnall apple - red skinned, diced salt end cracked pepper (For Christmas, reserve a slice of apple, dipped in lemon juice and add a strip of green pepper for garnish) Slice the squash in half, lengthwise. Scoop out the seeds and lightly butter the inside. Bake at 375°F about 45 minutes or until tender. Some people like to set the squash in a pan of water — I prefer a foil cup. Bake the sweet potato alongside until tender. Scoop out the squash into a bowl and save the skins, Scoop out the potato and discard the skin. Add butter, brown sugar and seasonings and whip with an elec- tric mixer until fluffy, adding as much butter as you need, Add the diced apple with a spoon, stirring gently. Pop back in the oven to keep warm. Garnish before serving. If you’re making this the day before, don’t stuff the skins or add the apple until ready to reheat. These are wonderful with a glazed ham and especially nice to serve at a buffet — New Year's maybe?
