Gregory Men's Apparel, Celtic Creations, Amber 2 Bookshop JB _ CRANBERRY SORBET | Beautiful to look at, wonderful to eat, and no fat, makes cranberry sorbet the perfect way to end a festive meal. 2. packages of cranberries (12 ounces each) 2cupsofsugar - 1 envelope of unflavoured gelatin 2 tablespoons orange flavoured liquour * ~s Over a high heat in a saucepan combine cranberries, sugar and one cup water. Heat to boiling and then reduce to low heat. Cover and simmer until cranber- ries pop and mixture thickens (approx. 10 minutes). Remove from heat and " press mixture through a sieve to remove cranberry skins. In a small sauce pan, gelacin over one cup water. Let stand one minute te soften gelatin. Cook over medium heat until gelatin dissolves completely. Add gelatin mixture and liqueur to cranberry mixture. Pour into metal pan, cover with foil and freeze until partially frozen, Remove from freezer and spoon into food processor, Blend with knife blade until smooth bur still frozen. Return to pan and freeze until firm. Garnish wich mint leaves. Makes 5 cups or 10 servings.
