March 17, 1999 — North Shore News oKing wi north shore news fe ROOD A. th greens ur St. Patrick’s Day Phyl and Jude Contributing Writers THERE’S a lot of blar- ney around about St. Patrick’s Day, but green-dyed beer aside, if you’re Irish you'll want to wear the green, and perhaps even eat something green. Try some recipes that are direct from Treland, as well as some that are literally green. Today a statue of 3t. Patrick stands in County Meath in Eire, on the site of an ancient and holy sanctuary. The popular lore is that St. Patrick drove the snakes from Ireland. While such a feat may or may not be true, he did bring Christianity to that par: of the British Isles. In many ways he saved the Gaelic language and Celtic tra- ditions by having the monks of the early church preserve in their copy of the Druidic influ- ences, the humour and the eternal optimism of the Irish people. Just imagine a world without the Faines, and the numerous other little people the Irish have given us... Irish Soda Bread This recipe makcs a nice moist soda bread, with the eggs, which some recipes don’t include. After this loaf is no longer fresh, it’s delicious sliced and toasted with a fried or poached egg or honey on top, because it’s loveiy and porous and soaks up the tap- ping. 4c. flour 4c white sugar i Tbsp. baking powder 1% tsp. salt 1 tsp. baking soda 4c. butter 2 eggs 1% ¢. buttermilk > Mix dev ingredients thar- oughly, Cut i butter until mixture resembles fine crumbs, Using a fork, beat eggs and buttermilk rogether, then add liquid to the flour mixture all at once, stirring with the fork to make a sett dough. Knead lightly on a floured surface about 10-15 dimes. Form inso a ball, place on a greased baking sheet or into an 8-ineh round cast-iron fry- ing pan. Cut a large X about 4-ineh deep on the top of the dough. Bake at 350 degrees F.(180C) oven for one hour or until golden brown and tester Inserted in centre comes out clean, Makes one large loaf! Trish Potato Pancakes Actually, despite the his- toric link berween the Irish and potatoes, they have no monopoly on potato pancakes. The Germans make a version they call kartoffelpufter, while the Jewish equivalent is called Latkes. Although the recipes vary somewhat, all are delicious. Instead of eggs an equivalent amount of milk works, and they're good with or without the baking powder, just difter- ent, They're yummy paired with a slice of ham or crisp bacon for breakfast, or with sour cream or applesauce, the European way, as a snack. A good baking potato such as the Russets is best. 4 med. potatoes 2 eggs, beaten 1 med. onion 1 Thsp. flour 4 tsp. salt 1 tsp. lemon juice 1 tsp. baking powder Grate potatoes and after pressing out as much liquid as possible, dump into a bow! Drop spoonfuls onto a well-greased trypan over mod- crate heat, pressing flat. Turn when brown and continue to trv until cooked through. Cream of Spinach Sow Phis is not only green foud, a suitable symbol for St. Patrick’s Day, but it’s delicious too. If you're feeling decadent, use the pure cream called for in this recipe, but if not, you may substitute haif chicken broth and half sour cream or yogurt. The fatter nwo should be substituted for the cream to create a refreshing cold sum mer soup 1 Ib. fresh spinach 3 Tosp. butter 1.4 ¢. flour 1 tsp. nurmeg 4c. pure cream salt and pepper to taste Wash and wilt spinach, either in microwave or on top of the stove, then rinse in cold water to prevent further cook- ing. Squeeze dry and chop finely. Mele butter in frypan. Add flour and stir, cooking for a few minutes. Remove trom heat and add freshly-ground nutmeg. Using a whisk, stir in liquid and return to heat, stirring with until the mixture comes te a bubble and thickens. Add spinach and sprinkle on salt and pepper to taste. Decorate with hard-boiled eggs.
