To reheat, dip the slices in
beaten egg and then fine bread-
crumbs and fry until golden in a
little hot oi!. When done, top each
with a slice of white cheese and run
under the broiler. A pinch of
Italian herbs and a spoonful of
tomato sauce makes your Icftovers
into winners.

Rolled Meatloaf
2 Ibs. medium ground beef
2 eggs
¥2 cup fine dry breadcrumbs
1 medium onion, grated
1 carrot, grated
Worcestershire sauce fo taste
¥2 cup ketchup
salt and pepper (1 use the
‘*‘seasoned'’ varieties).
Filling
1 package frozen chopped
spinach, thawed and well
drained
v2 cup grated parmesan cheese
1 cup white cheese (Edam, jack,
etc.) shredded
¥: bunch green onions, chopped
1 egg, liphtly beaten
2 slices stale bread, crumbled
1 teaspoon mixed Italian
dried herbs
¥ teaspoon garlic powder

Combine meatloaf ingredients
and mix well with your hands. On
a sheet of wax paper, form the
meat into a rectangle — about 1°’
thick and 12”’ x 10"'. Combine fill-
ing ingredients and spread over

meat. Roll like jelly rofl and piace,
seam side down on a baking pun.
Bake about !% hours at 375°F.
Bake some potatoes alongside
and serve with a sauced vegetable
such as cauliflower with cheese
sauce or Harvard beets. Coleslaw
goes well, too.
