The trick with devilled eggs is

The most popular is always one
perfect, hand-peeled red shrimp,
curled up with a bit of parsley
where his tail ought to be. It adds
to the cost and your fish merchant
is going to hate you when he has to
count 24 perfect shrimp but what
the hell?

devilled eggs, are real budget
beaters but look so fancy that you

Jellied Devilled-Egg Salad

8 hard-cooked eggs, devilled as

above and garnished with anything

on the above list. Don*t use whole

parsley jeaves — they squash down

and look stupid.

1-3 oz. package lemon jelio

VY teaspoon salt

1 cup boiling water

i cup cold water

1 tablespoon vinegar

dash Tabasco or cayenne pepper

% cup finely diced celery

% cup green stuffed olives (use

cheaper ‘‘salad’’ ones) chopped

You will have 16 devilled-egg
halves. Depending on the size or
shape of the mold you are using,
some will be included with the jello
mixture and the rest will be used to
garnish the edge of the plate. Set
on curly lettuce or on a bed of
parsley.

Prepare the jello by adding hot
water and salt and stirring until
blended. Add cold water, vinegar
and pepper.

Spray a mold very lightly with
non-stick spray unless it’s already
- lined with Teflon.

& Pour some of the gelatin mixture

. on the bottom to a depth of %-
inch. Chill until firm. Chill the rest
of the jello mixture until the con-
sistency of egg whites.

When the first layer is chilled,
spoon in about %-inch of gelatin
and arrange the eggs, top down,
pressing gently until they reach the
firm layer. Don't squash them.

Chill, while you mix the remain-
ing ingredients into the rest of the
gelatin. When eggs are firmly set,
add the remainder of the gelatin
mixture, cover mold with plastic
wrap and chill until firm.

To serve, unmold on a bed of
jettuce or parsley and garnish with

the remaining eggs. As you can
see, this is a very basic recipe and
you can decorate to suit yourself.
Tie celery and olives can be cut
down in quantity and some fresh
shrimp, well-drained, added.

with devilled eggs, overlap hard
cooked egg slices in un attractive
ting over the first layer of gelatine.
