Entrees sound extremely ap- petizing: Breast of Chicken with camembert cheese, artichoke and glazed with kiwi and grapefruit sauce ($14.50); Roasted Veal Medallions with grilled apple rings and apple cider mustard pecan glaze ($16.95); and Tri-colored Peppered Salmon with bay scallops and pistachio pesto sauce ($15.25). They obviously enjoyed making this and the spirit jumps from the tracks. The middle-aged pop music giants dabble in each other’s signature sounds and take turns trading lead vocals. The Lynne-Harrison combina- tion, which worked so well on Harrison’s Cloud Nine comeback release in 1987, ties the Wilburys project together with the inclusion of Cloud Nine session musicians Jim Keltner on drums, Ray Cooper on percussion and Jim Horn on sax. It’s an addictively feel-good ef- fort. But with most of the songs clocking in at about three and a half minutes, it’s over all too soon. Toots Hibbert -— Toots In Mem- phis, island Records/MCA 1988 Toots moves from Maytals to Memphis. The Jamaican reggae legend pays homage to his R&B roots by covering Memphis-sound hits, including a couple of Otis Redding tunes, I’ve Got Dreams to Remember and Hard to Handle. To snag the spirit of the place and times, he teamed up with top- drawer reggae and Memphis ses- sion musicians to record the whole set in a mere 10 days at a Mem- phis studio.
