IT WILL COME as no surprise to those who have reeled reeking out of my classes to learn that, amongst the growth of herbs out there on my balcony, there flourisheth a garlic plant. It presently sports a very pretty blossom, a sort of small garlanded ring of mauve starry flowerets, very bonny. It’s my first attempt at a garlic crop, and I am unsure of how or when to harvest. It was already sprouted when I bought it, last spring, and the flat blades of dark green that have thrust up in no way ~ by Eleanor Godley suggest that papery clump one picks up at the store. One of the local garden writers says one should be setting out cloves now, as One would set our daffodils for spring pleasure. I think I'll wait to see what lies under this one. Meanwhile, this same garden expert has a recipe for a_ stunning garlicky sauce. I use the word “stunning” advisedly; I licked an exploratory taste off my forefinger when | finished making my first batch, and was forbidden the room when the television set was on in case the screen melted! Actually, it is excellent, for hot freshly-cooked vegetables as well as added to potato salad and so on. But the original recipe, which I made, called for five cloves of garlic, and take it from me, for the screen- melter, two would be ample. . You: have this advice from the lips of a dedicated garlic’ aficionado. You will need: 2-5 cloves of fresh peeled garlic % cup of oil 3 egg yolks 3 Tbispns of lemon juice ¥% cup more of oil (180mL) salt to suit. (60mL) (45mL) If you use a blender, put “everything except the % cup ‘ of oil (180mL) into the container and blend at high speed for 20 seconds. Keep the motor at the same speed, remove the insert in the cover, and slowly pour in the oil. It will very quickly take on a smooth and creamy constistency, like mayon- naise,- and can then be scraped into a covered jar and refrigerated. If you use a beater, you will have the same results but with a bit more time and effort. Use your garlic press, or the blade of heavy knife, to pulp the peeled cloves, then blend that pulp very thoroughly with the % cup (60mL) of oil. Beat in the yolks then, and the lemon juice, then drizzle the oil slowly as the beater whirs on high speed. Use a spatula to turn the mixture in upon itself constantly.
