(I was also secretly hoping he might want te take up these culinary skills. It didn’t work.) It pleased me greatly to find the men were ivi very good hands. The hands belong to Ma‘-i, which you say more or less like Mary, and I was astounded at the scope of her instruction. In this lesson they were to make _ 4 pasta dish, spaghetti in this case, plus, of course, ~ a delicious sauce. ‘The men had made the sauce in class about a month prior, and it was perfect — one should make all sauces a month “in advance, judging by the success of this one. I ‘should have asked for the vintage years recipe. Darn it. I neglect- ed to do so. Maybe I can do another wangle some day. But the most astunish- ing aspect of this particu- lar class was that they made the spaghetti them- selves. No, really. They had the flour in a bowl and the water measured into it — not just one bowl, of course, there were two going at the same time — and they kneaded and kneaded and squeezed and rolled and finally achieved a manageable blob. Then the biob had to be rolled and rolled and rolled some more the other way until it was the correct thickness for stripping into the long strips which. would become veritable _ Spaghetti. MS. Some of the men were more successful than oth- ers, of course — some got the hang of it early, others never did. Never would. But the effort was worth it when the “trees” of long dough-threads began to accumulate and it was time for the boil- ing. The trees for drying were just that, several skinny wooden arms sticking out on which to drape the spaghetti strips. Mairi had a huge caul- dron coming to the boil on the kitchen range, and the pasta was introduced into it for-a very bricf time. It cooks very quick- ly of course. Besides the cookery, the men have regular classes in fitness, and also make various sorties into interesting parts of the Lower Mainland, or 10 the homes of interesting people, as well as to some of the institutions for the arts and sports and what- ever clse their curiosities direct them into. It’s a loose connec- tion. There are no over- all fees. The men pay as they go, which gives them the frecdom to skip a tour in which they have no interest. It’s not pertinent, per- haps, but there is a new ladics’ group coming into bloom at the Neighbourhood House, which convenes while the men do their cooking. It’s billed as a coffee- clatch, for coffee and chat and perhaps there will grow out of it such things as a group interest in an herb garden, say, or just perhaps, in making fresh pasta. Who knows?
