A reader called, “Why didn’t vou include your recipe for dumplings?’’ She has been using it with great success since I printed it years ago and noted that it is another real “Budget Beater’’ because it is bas- ed on bread — an excellent use for leftover heels and slices that are past the sandwich stage. Bread Dumplings 3 cups stale bread crumbs, ¥2-inch Y% cup all purpose flour 1 tablespcon grated onion 1 tablespoon snipped parsley Y% teaspoon baking powder I egg, lightly beaten Y cup milk 1 tablespoon butter, melted Combine the bread, flour, onion, parsiey, and baking powder. Add egg, milk and butter. Allow mixture to sit in the refrigerator at least 15 minutes. Form into walnut-sized balls.
