approximates the way I’ve had it
served in Italy.

Chicken (maybe) Itaiiza style
6 whole chicken legs
corestarch
‘oll for frying
spice mixture:

1 teaspcon mixed dry Italian herbs
1 teaspoon garlic powder
salt and pepper (cracked)

Dust legs with cornstarch. Fry in
a bit Of het ail, skin side up, untii
half-cooked — about 10 minuics.

Turn and cook another five to
10 minutes until fully cooked —
test with a skewer. Turn skin up
and dust with mixed seasonings.

Transfer chicken to an oven-
proof platter, skin side up.
