For this next combination, f sug- gest you use local smoked salmon, The difference between the very expensive Nova Scotia salmon and our salmon tips is lost in a mixed, filling such as this one. Fine-grained smoked salmon is prized because it can be sliced paper-thin. Salmon tips don’t slice worth a darn, they don’t even cut evenly. However, they are ideal - when you want chunks of flavor to combine with other ingredients.
