It featured excellent fresh scallops, tomatoes and mushrooms in a complex and vibrant sauce combining white wine, basil, mint, olive oil, lime ‘and coriander. The whole dish had the tantalizing bouquet of a fresh herb garden. - The Table Hopping research team was also treated to fresh baked coho salmon ($12.95 per serving) presented with three first- rate sauces: mint and lime; _ mustard; and a spicy blend of saf- fron, garlic and cayenne pepper. All were delicious. _ The fish came with a side dish of Skordalia, a traditional Greek paste of potato, garlic oil, salt and pepper that is an excellent accom- paniment for any seafood. y:When complete, Pasparos’ new ‘menu will feature a dozen new ap- petizers designed to lighten both food and atmosphere. The restaurant’s authentic out- door patio, for so long covered with a blue-striped canopy, is now completely onen air —- Pasparakis having removed what he felt made the taverna’s atmosphere several degrees tco oppressive. The restaurant’s waiters are all seasoned veterans. Most have been with Pasparos for at least the past 10 years. They might seem a trifle nonchalant, but they have the ex- pertise to approximate authentic Greek-style service. Pasparos wine list is also destin- ed for a minor upgrade to include the increasingly-popular Australian vintages and more wines from the smaller B.C. estate wineries. From the restaurant’s original menu, pita bread ($1.50 for two pieces) is a good way to stir the digestive juices. The light, white flatbread is baked with a crisp but- tered crust that is a good base for homous ($3.25) or Tarama ($3.25). The latter, a fish roe pate, is a good alternative to the former, which can be somewhat garlic heavy for some palates. Other appetizers worth sampling are Dolmathakia, vine leaves stuf- fed with ground beef, rice and subtle spices ($6.25), and Pickled Octopus ($5.75). The latter is served in olive oil with tomatoes, cucumber and oregano and features long pieces of firm, white octopus meat — a good adventure in food textures. Pasparos also serves one of the best creme caramel’s in the Lower Mainland. Made without egg whites, it is wonderfully creamy and rich. Baklava, too, is well worth ordering. Pasparos serves the phyilo pastry, walnut and honey dessert without smothering the Greek classic i in honey. Pasparos is the North Shore’s Greek original and remains one of its best.
