‘4 cup butter
3 egg yolks
2 tbsp. lemon juice
‘% tsp. salt
8 whole eggs .
4 English muffins,
split into half
8 slicés cooked ham
Paprika

In small saucepan, heat
bubbling but not
brown. In top of electric
blender, put egg yolks,
lemon juice, and salt. Cover
and turn on low speed until
blended. -

With blender on high
speed, slowly pour in hot
butter; blend until thick and
fluffy. Keep warm over hot
water.

Poach. eges. Toast muf-
fins.

Arrange slice of ham, then
poached egg on each half of
muffin. Spoon sauce over.
Sprinkle with paprika.

Makes 4 servings.
Suggested brunch menu:

Eggs Benedict, asparagus

with toasted almonds,
orange slices, seedless
grapes, melon balls in creme
de menthe, and butter
cookies.
