In addition to being quick and cool, it’s also low in fat. When grilled, food needs little or no oil. And when the food cooks, the fat drips away. As an option, you may choose to brush a amount of seasoned olive oil on the food before grilling. Fat contains almost twice the calories as an equivalent amount of protein or carbohydrates. Health-conscious people try to limit their daily intake of fat to a range of 20-30 per cent, and grill- ing is an ideal cooking method to achieve this goal. For fat-reduced cooking it’s best to remove any visibie fat from chops or steaks, and the skin from chicken. Fish is also a good choice ‘or . Many varieties are naturaily low in fat and even the fish higher in fat are thought to be healthful for eating. Fish steaks or thick cutlets should be grilled for five minutes per inch of thickness, per side. If you are grilling thin, low-fat fillets, try cooking on one side only - for approximately four to five minutes. This eliminates the need to use a fish grill in order to flip the delicate fillets. If you are in the market for a new barbecue, buy it with care. Although many people think char- coal makes better flavor than nat- ural gas and/or propane, it is ac- tually the fat and juices dripping on to the charcoal, lava rock or flavorizer bars, vaporize and give the food its cksracteristic barbecued taste. Gas grilling makes cooking easi- er and faster and provides greater heat control. Some gas barbecues use porous Java rocks where fat and juices can accumulate causing flare-ups. Others have specially angled ‘‘fla- vor bars’? where the juices vaporize while the fat drips away into a removable pan. Look for a covered barbecue that gives you the option of roasting, smoking and grilling. Even quick-cooking cuts of meat and fish cook faster and stay juicier when cooked with the’ lid down and vents open. If you have an extra propane tank you'll never have to worry about running out of fuel in the middle of an important party. Just be sure the tank is easy to install. Some gas barbecues include a scale that measures the amount of gas in the tank by the hanging weight of the tank. A push button igaiter is an im- portant option that eliminates the need for an endless supply of mat- ches. Another option is additional burners. A barbecue equipped with three burners gives you the choice of ‘direct cooking (for searing steaks, hamburgers, etc.), or in- direct "cooking (for roasting larger items such as ham, roast or See Barbecue Page 22 TANYA MANDEL Tanya has been delivering 94 North Shore News papers on Wednesday and Fridays in the Canyon Heights area since last duly. She attends Handsworth Secondary School and is in grade 9. She particularly likes Drama and sewing in Home Economics and has made several items of clothing for herself this year.
