Holiday Bread Sticks (makes 24 bread sticks) Herb Dough Ingredients: 4% to 4X c. all purpose flour 1 package Traditional Active Dry or Quick Rise Yeast 1% tsp. salt % tsp. cach: rosemary, oregano, and thyme (leaves) 14 c, water 2 tsp. olive oil Seed Topping 1 large egy, lightly beaten sesame or poppy seed Method: Ina large bowl, combine 2 cups flour, undisselved yeast, salt, rosemary, oregano and thyme. Heat water and oil until very warm, between 120°F/50°C to 130°F/55°C; stir into dry ingredients. Stir enough remaining flour to make soft dough. Knead on lightly floured surface until smooth and elastic, about 6 to 8 minutes. Cover; let rest on floured surface 10> minutes. (Or, place dough in a greased airtight container and refriger- ate for up to 24 hours). Divide dough in half, roll cach to 9-inch square. With sharp Knife, cut each square into twelve 3/4-inch wide strips. Holding ends of each strip, twist in opposite direc- tions 5 times. Place sticks, slightly apart, on 2 large greased baking sheets. Cover; fer rest until risen. slightly, about 10 to 20 minutes. Brush with egy; sprinkle with seed. Bake at +00°F/200°C. for 20 ta 25 minutes or until done. Remove from baking sheets and coal on wire racks. Store bread sticks in an airtight container or wrap and freeze. To reerisp, heat uncovered on baking sheets at 400°F/200°C for 5 to 7 min- utes.
