They have the notion that Christmas Day should be reserved for celebration, not occupation. They prefer to let the professionals sweat it out in the yuleiide kitch- ens. And why not? chorus mothers and other designated Christmas Day chefs all over the North Shore. Christmas Day diners must con- sequently be an organized lot. They usually get their reservations sewn up well in advance -- prob- abiy while the rest of us are still trying to shake the ring of Christmas carols from our ears in January. Which all adds up to panic sta- tions if you don’t organize your S Christmas Day reservation in the next five minutes. The following, then, is a selec- tion of North Shore restaurants open Christmas Day and featuring special yuletide cuisine. THE AMBLESIDE INN, 1495 MARINE DRIVE, WEST VAN- COUVER, 922-0101 Willie and Martha Brueckel are master hosts, and their restaurant has a warm Germanic atmosphere that is well suited to festive cele- brations. Their Ambleside inn, host of toyalty and assorted glitterati through the 1980s, features a Christmas-Day choice of veal roast, grilled sole, roast duck or traditional roast turkey. Dessert wiil include plum pud- ding and Swiss chocolate. Christmas Dinner with all the trimmings, appetizers, soups and desserts goes for $29.75.
