Cover with water and add bay leaves and cel- ery tops. Bring to a boil, reduce heat and simmer about three hours. Strain. Remove any bits of meat from the bones and set aside. Discard the bones, bay leaves and ceiery tops. Return the broth to a boil. Add remaining ingredients and simmer about 30 minutes. Taste for seasoning and add: Seasoning salt Cracked pepper Leftover bits of meat from the carcass Serve with hot cheese bread or grilled cheese sandwiches. Anyone can make a turkey sandwich. Some fike them on white bread with mayonnaise, let- tuce and leftover stuffing. Others add cranberry sauce (can’t stand it, myscif}. We can change the bread — isn't 12-grain delicious? We can add sprouts, tomatoes, cheese or tofu (?) but we still have the classic turkey sandwich. I like these better! Grilled Turkey Sandwiciies White bread slices, buttered Sliced turkey Dressing — {1 make extra so there's lots for sandwiches Sait and pepper In a large frying pan or griddle, place white bread slices butiered side down. Cover with. sliced turkey and dressing. Top with white bread slices, buttered side up. Grill over medium high heat until bottoms are toasted. Turn and press down. Grill until the other side is toasted. This stands alone as _ the simplest recipe ever appearing here! I had these for the first time when ! was 16. When I was a child, leftover turkey always appeared in many SAVE guises — soup, sandwiches, hot sandwiches with chips and finally: Creamed Turkey \% cup butter 4 cup diced onion V4 cup diced green pepner Va cup flour 2 cups milk (it was whole milk then — [use part 10% cream) 2 cups left-over turkey, diced One recipe (2 cups fleur) baking powder duscuits Garnish: parsley, paprika, diced pimentos Melt butter and cook the onions and pepper very gently. Stir in flour. Add milk and stir until thickened. Stir in turkey. Split biscuits and spoon turkey mixture on top. Garnish, You can use puff pastry shells instead. Add a drain- ed tin of mushrooms if you like.
