So, your main event is going to
be charred outside. By early sum-
mer everyone is heartily sick of the
same old salads and baked
potatoes so the cook is frantically
searching for some new accom-
paniments. For the next couple of
columns I'll concentrate on ones
that can be prepared in advance

and may be a change of pace.

Scalloped Corn

This is especially zood with
grilled chicken or fish.

% cup each chopped onion
and green pepper

2 tablespoons butter

2 tablespoons flour

dash Worcestershire sauce

salt and pepper
¥% cup milk

2 tins Niblets kernal corn,

drained

1 egg, lightly beaten

buttered fine dry breakcrumbs

Saute the onion and pepper in
the butter until limp. Stir in flour
and seasonings. Add milk and
cook gentiy, stirring, until
thickened.

Add corn and egg. Turn into a
buttered, I-qt. casserole dish and
top with crumbs. Bake at 350° for
30 min. or about 15 minutes longer
if it has been prepared ahead and
refrigerated.
