Italian expertise From page 20 Salute!, the immaculate Sergio Gallo presides full time at Salute! His meticulous touch keeps the Safete! torch burning bright. Salute! is in good hands. Mr. Hanna knows that. In the kitchen chef Wayne Maki turns out a menu that is more than a match for the other members of the Hanna- ‘Mario Corsi restaurant family. There is, of course, a full page of pasta ($13 to $20). Try a Spaghetti Salute!, a Malfalda al Brandy or a Capelli D’angelo Delicate. And an ambitious assort- ment of meat and fish entrees ($17 to $20). A half dozen veal dishes (with apples, pro- sciutto and calvados; in marsala sauce; with prosciutto, melted mozzarella and toma- to), chicken (breast with dried mushrooms, prosciutto, brandy and cream; with pep- pers, capers and hot tomato sauce) and seafood (prawns sauteed in garlic and vermouth butter; or marinated and grilled; scallops grilled with roasted garlic and porcini mushrooms in cognac sauce). You can't go too far wrong in the entree division. The sampled beef tender- _ loin was finished in a rich gor- gonzola cheese sauce that is the ideal accompaniment for a fine cut of red meat. And the evening's special Sea Bass was grilled simply-in olive oil. Anything more would have been over-embroi- dering. Entree selections were accompanied on fine Iralian flatware with shredded red cabbage stewed in tart apple juice, steamed spaghetti squash, sauteed zucchini, cot- tage-fried potatoes and a grilled red bell pepper. Or you could stay in the Insalate and Primi — Piatci appetizer section ($6 to $10) and eat like a king. Or queen. A special Antipasto plate was delivered in a large ceram- ic serving platter and featured an impressive rainbow of deep- fried seatood (mussels in the shell, scallops, calamari, soft- shelled crab), grilled prawns and other Salute! specialities such as marinated mushrooms, grilled radicchio stufted with mozzarella and bruschetta topped with bocconcini, fresh tomato and basil. To complement its menu, SALUTE FEAST ... A platter of lamb chops, prawns and pasta pre- pared at Salute! LEND ME. YOUR EARI!
