I’ve also been dead broke myself - fortunately, not late- ly. But there was a time when we were two married students trying to stretch $14 a week around a grocery bill. Two big factors in eating at a poverty level are planning and time. Planning starts long before you ever reach the market. Later, he got his marks back when they learned that instead of being overweight, he was the proto- type of the ideal rat. Does this tell you something? The poverty cook has got to learn about nutrition. Without a balanced diet anyone will get sick. Some might even have the nerve to die. Every public library is loaded with good books on nutrition. Reading is free. The best friend of the poverty cook is the Bulk Food market. What these markets do is eliminate packaging. Instead of having to buy 10 kilos of flour to take advantage of a super- market special, you can buy as little as”you need - maybe just enough for one loaf of bread - but get the flour at approximately the special price. Need a handful of raisins? Why buy a pound package? Anyone on welfare will tell you that they can’t afford to buy today what they can’t use until next week. They know the real meaning of ‘‘hand- to-mouth’’. Cheap protein is the first aim of the starvation-level cook.
