Candy man visits
chocolate fair

SUGAR DADDY takes on a different meaning
when you watch pastry chef Werner Schmidt

making figurines out. of blown sugar,

paste and chocolate, with the special love and care

he puts into it.

candy man, who works as a
cake decorator at Safeway in
Lynn Valley Mall and blows
Sugar figurines as a hobby,
will be giving a demonstra-
tion at Carousel Theatre's

Sunday, Feb. 10.

An expert in the trade,
Schmidt was formally train-
ed in Germany and

1 Switzerland. His first three

years of training were in
baking, the next three in
pastry making and then a
special school of sugar
taught him sugar blowing.
“If you have a trade,”’
Schmidt says, “‘it’s like a

To make the sweet figures,
Schmidt mixes sugar, water
and glucose together, and
adds six drops of citric acid
to keep the sugar dry. He
then cooks it at 320F, and
pours the mixture onto an
oiled marble sheet. ‘It’s just
like a dough while it’s still
very hot.”

Schmidt wears rubber
gloves when he works with
the sugary dough, and keeps
the material under a heat
lamp so it will remain soft
and pliable. He then forms it
into a a ball and’ places a
tube with a hand pump on
the end into it, and blows air
