Now a dash of salt and the decision, sweet or not? If it’s sweet for you, stir in 1 Tbspn. (1SmL) of sugar and a sprinkle of cinnamon. Otherwise, chapped chives or green onion, maybe try _Some oregano, or basil. Heat up some margarine, and fry your “pancake”. Serve the sugared one with apple butter, or honey, or preserves; serve the other | with unsweetened cold apple sauce, OF sour cream. You could be really in- ventive, adding grated carrot or zucchini, or chopped apple, maybe raisins? blueberries? Whatever, you're getting a real powerhouse meal, and it’s not “the same old thing.” There are lots of ways to combine elements that will give you a rounded meal ‘ without putting you off with sheer bulk and volume. LIVER PATE FOR CHRISTMAS 1lb. chicken livers, preferably fresh Try egg nog Egg Nog with a difference! Serve up this delicious dessert while you wrap presents, decorate the tree, or after a neighbourhood carol sing. Make it in the cvening, but be sure to include it in your Christmas festivities. EGG NOG PIE 3 eggs, separated 1'4 tbsp (20 mL) gelatin Y% cup cold watcr 2 cups (500 mL) milk “ cup (80mL) sugar ‘% tsp (1 mL)salt % cup (60 mL) sugar 2 tbsp (30 mL) rum or 4 tsp. (2 mL) rum flavour- ing tsp (5 mL) vanilla oz. (25 g) semi-sweet chocolate, slivered 9” (23cm) pastry shell, baked and cooled or chocolate crumb crust To make the chocolate crust, crush chocolatc wafers to make 1% cups (375 mL) of crumbs. Add ‘4 cup (125 mL) melted butter and stir well. Press into pic plate and chill. In a small bowl beat cgg yolks until thick and lemon coloured. Sprinkle gelatin over cold water and let stand until softened. Meanwhile heat milk, % cup (80 mL) sugar and salt in saucepan over low heat. Add gelatin and os stir sountil dissolved Gradually stir a small amount of hot milk into beaten egg yolks, then slow- ly add beaten egg yolks to milk mixture. Cook slowly over low heat for 2 minutes. Chill until slightly thickened. In a large bowl beat egg whites until frothy. Gradual- ly beat in % cup (60 mL) Ove* 100 Precee 2 medium onions, sliced ‘A cup butter 110 oz. can mushrooms, drained Y% cup sherry ‘A tsp. nutmeg ‘A tsp garlic powder dash of tabasco or pepper In a large frying pan saute onions, livers and _ butter until livers are just cooked (no more pink). Place in blender with the rest of the ingredients. Cover and blend until smooth. Pour into crockery pot or small dish with cover. Refrigerate. pie sugar and continuc beating until stiff peaks form. Fold chilled custard into egg whites along with flavour ings. Pour into prepared crust. Chill until = set. Sprinkle with = slivered chocolatc before serving.
