Health Minister Bo
McClelland has declared the
week of March 5 to March 10
as B.C. Nutrition week, the

_theme for which is Eat Right
— Feel Great.

_ “‘While more and more
Canadians are becoming
increasingly aware of the
importance of diet as a
preventive health measure,”’
said the Minister, ‘‘there
are still. far too many people
_ whose indifference to the
principles of.sound nutrition,
or whose neglect of it,
contributes to the breakdown
of their own good health to a
very significant degree.”’

*‘Good nutrition is one of
the lifestyles over which we
have direct control. As
individuals we can decide to
take care of ourselves or put
ourselves in jeopardy - of
contracting a serious illness.

‘In view of the steadily
mounting evidence of the
correlation between poor
nutrition and poor health, for
example diet and cardio-
vascular disease, one has to
wonder why so many pcople
pay so little attention to their
diets.

‘After all’’, concluded the
Minister, ‘‘Eat Right — Feel
Great is more than just a
slogan, it’s fact.”’

1 tsp.. prepared mustard .
1 tbsp. lemon juice
1 egg white

Cook fiddleheads following
package directions. Drain;
measure liquid and add ‘milk
to make 1% cups. Melt
butter, stir in ‘flour and
seasonings. Gradually add
liquid. Cook, stirring con-
stantly, until smooth and
thickened (about 5 minutes).

Combine egg yolk ‘and

prepared ‘mustard. Add a
little of the hot sauce to egg
yolk, then stir into remaining
sauce and cook 1 or 2
Remove
from heat and add lemon
juice.

Beat egg white until soft
peaks form and fold gently
into saucé. Pour, as desired
over hot fiddleheads. Serves
