The duo’s specially created menu is available until Oct. 15 in Chartwell and the Garden Terrace. James is executive chef at The Regent in Auckland. I had the opportunity to sample his dishes at Chartwell and found his cooking to " . go far beyond the stereotypical kiwi and famb preparations. “(New Zealand’s) unpolluted environment yields food sources that are unsurpassed for their purity and quality", says James. “Because New Zealand rarely imports fruit and vegetables, you only cook what's in season. The island country also offers an enormous variety of seafood har- vested both from the wild and aqua farms: green lipped mussels; Pacific oysters; fresh water prawn; paua (abalone); sea bass, orange roughy ~ and kingfish warehou. When served New Zealand style, fish is often napped with a wine-based sauce. To sample New Zealand food and wine is to understand why the country is considered to be the last unspoiled outpost of civilization.
