And, as far as economy goes —
forget it! Deep frying is too damn
hard on the arteries to make a
habit of it so the expensive oil
generally gets garbaged.

And, to get even more com-
plicated, | make this meal in two-
person batches which leaves me
“singing in the kitchen’’ for up to
an hour while everyone eats in
shifts. But, for anyone with a
streak of musochism, here's the
menu, general instructions and my
best wishes.

Home-made Fish and Chips

First, | use an old, cast-iron
frypan for deep frying. It is so
heavy that accidents are unlikely.
Second, I use a thermometer to
gauge the temperature of the fat.
Why go to all this work if you end
up either burning the product or
under-cooking it?

1] use a high-quality oi! such as
Crisco or Mazola. 1 also like the
brick lard processed for deep fry-
ing, however, 1 don’t fike the idea
of all that cholesterol.

Chips

Extra-large bakers are the best.
Do not pecl! My family likes either
the thin, shoestring variety turned
out by my Cuisinart food pro-
cessor or the large, traditional kind
I chop myself,

For cach (average) person, allow
one big potato. Stice as you like,
heap into a big pot of cold water
and leave for as long as it takes to
make the batter for the fish. Heat
