Grapefruits, limes, valen- cias, lemons and blood oranges are in plentiful sup- ply. They are inexpensive and as a rule excellent quality. The great bulk of citrus fruit we receive on the West Coast comes from California, Texas and Florida. There is some entering from Mexico and other Ceniral American sources but not in large quantities. Looking at a grapefruit packing case | was reminded that the beautiful appearance of the fruit is assisted by some positive human inter- vention. Citrus fruits (as well as other vegeta- bles and fruits) are coated with a food grade vegetable and/or Lac-resin based wax or resin to maintain freshness, thiabendazole and/or orthophenylphenate used as fungi- cides. . The application of wax to fruits and veg- etables has been an accepted practice since the 1920s. The primary function of these coatings is to prevent moisture loss. The waxes and the food grade shellac have been approved in Canada and in the U.S.A. for decades. All waxes applied to fruits and vegetables are naturally based. They include beeswax and carnuba wax from the leaves of a particular Brazilian palm tree. The food grade shellac comes from an insect found in India and Pakistan. These food grade ingredients are also approved for use in the preparation of candics and pastries. ‘ Citrus fruits should be an important part of our diet. Low in calories they are high in Vitamin C and other vitamins. Purchase cit- tus fruits that are bright and thin skinned. They should be medium-tirm to the touch, and feel heavy — the heavier the fruit, the more juice it contains.
