ALBONDIGAS SOUP

Broth:
1 onion, medium, chopped
4 cloves garlic, minced
4 cups of beef broth
(make from mix)
% tin tomato sauce
2 teaspoons mixed dried herbs
(Italian seasoning)
dash of Worcestershire sauce
jolt of oil for frying

Meatballs:
3 pounds mixed beef, pork and
veal
(ground meatloar mix or the
equivalent)
V3 cup raw white rice
1 egg
% cup chopped parsley
2 tablespoons grated onion
dash of Worcestershire sauce
salt and pepper

Prepare the broth by sauteeing
the onion in the oil until limp. Add
the remaining ingredients and
simmer about half an hour.

Prepare the meatballs by mixing
all ingredients and forming into
balls about the size of a walnut.
