altered foods. Home econo-
mists and consumers are
encouraging a policy of as
much on-label disclosure as

The future promises to be
filled with challenges for
everyone. For example,

Future projects include a more

100 g diced double smoked
bacon

salt and white pepper to taste

pinch f grated nut

pinch of grated nutmeg
chopped fresh parsley and
green onions for garnish

Select a heavy soup pot,
Bring the stock or consomme
toa bail, Grate the potatoes
ona hand grater, Chop the
cabbage into matchstick sizes,
Add both to the stock, with
the celery plus salt and white
pepper to taste, and the nut-
meg. Simmer for 30-40 min-
utes. Do not overcook.

Saute the diced bacon in
the gil until crisp, remove to a
paper towel, Now, saute the

- Onions until plossy Remove

with a slotted spoon, Drain
the oil and bacon fat as much
as possible. Add bacon pieces
and onions to the soup mix-
ture, Simmer five more min-
utes. Check flavor.

Serve hot, garnish with
chopped parsley and small
green onion pieces, A great
and elegant soup. Serves four.

Summer Potato Salad

1 ks potatoes

100 g freuh peas

100 g fresh diced carrots
100 g peeled diced cucum-

bers Dy
50 g diced red bell peppers
10 ml. freshly, chopped dill
salt and pepper to taste

200 mL commercial mayon-
naise ho,
60 mL unflavored yogurt,

Boil the potatoes in the:

cool, peel and cut into bem

Blanch the fresh peas and
the peppers for one minute,
and blanch the carrots for two
minutes, Cool, Set aside.
Sprinkle a little salt on the
cucumbers,
After five minutes squeeze
the salty juice from the
cucumbers, Mix together aff.

Check for flavor, Refrigerate
covered for one hour,
Serve on a platter, Garnish
with radish roses, parsley
