Select from the Bing varieties (bing, vans, sams, Lambert), not the sour “pie” cherry. Allow the bottled cherries to mature for several weeks or months (if you can wait) before serving to let the flavors develop. Serve as a condiment to roast pork, grilled pork chops, venison, game, duck or dark meat poultry. Or, wait until Thanksgiving and serve them as part of the yearly family feast. They are incredible! 2 ibs. (1 kg) sweet cherries 1 gt. (1 L) best-quality white wine yinegar % th. (250 g) light brown sugar, packed % tb. (250 g) white granulated sugar 12 whole cloves 1 Tbsp. (15 mL) whole allspice 1 cinnamon stick Continuous strip lemon peel from 1 lemon (yellow part only) Rinse the whole unpitted cher- ries with cold water. Dry complete- ly on paper toweling. Pack cherries into clean, dry, sterilized glass jars. Set aside. Prepare the pickling syrup. Combine the vinegar and both sug- ars. Bring to a boil, uncovered, and cook 5 minutes. Add the cloves, alispice berries, cinnamon stick and lemon peel strip. Simmer 15 min- utes. Remove syrup from heat, and cool to lukewarm. Strain syrup (reserving a few allspice berries and cinnamon stick if desired to tuck into the jar), and pour evenly over the cherries to cover completely. Cap and refriger- ate up to six weeks.
