The exhibition was part of what was billed as ‘‘$1 million worth of chef talent’' displayed at the gallery to help launch Famous British Columbia Restau, ints, 1987-88, a new book by food critic Bill Clark. Mattman’s June 8 Edible Art entry, Chicken Supreme with Papayas, will be one of the recipes featured in Clark’s book, which is scheduled to be published in inid- July. Clark says his book will feature only what he considers to be the finest B.C. restaurants whose kitchens use only fresh ingredients for all food preparations and use no MSG, frozen meats, food col- orings., preservatives or micro- waves. In addition to the Ambleside Inn, West Vancouver's Chesa and North Vancouver's Corsi Trattoria were also selected by Clark for his book. “For the size of the community the North Shore did very well,” Clark said. ‘‘People over there ob- viously care about what they are doing with food.” He said that 99 per cent of the restaurants tested for the book were eliminated. In all, 400 restau- rants in the Vancouver area were assessed and asked to fill in Clark’s 150-question question- naire. Over 600 restaurants around B.C. were contacted by the author, Road-tested recipes, restaurant menus and restaurant culinary tps will be included in the book.
