Carry on upstairs for your main course at Ciao Mein where Italian meets Chinese and your taste buds are in for a moving feast at modest prices. Same gocs for the Singha Thai, where owner-chef Chai Chaowasaree served up the best Thai food I’ve had in a long time along with Thai music and dancing. After a few evenings of restraint we had what Sandra Gustafson would call a big splurge at La Mer, the grand- est, prettiest and most scaside of all the Oahu restaurants. Located at the elegant Halekulani hotel, La Mer rejoices in chef Yves Ganier who combines the cuisine du soleil of his native South of France with the bounty of Hawaii's natural harvest. As a any good chef knows the best ingredients don’t need a lot of work, so the rack of lamb is simply roasted with Dijon mustard. On the other hand a tomato and fen- nel marmalade can bring the best out of a Pacific fish. Then it was off to the Big Island with Aloha Airlines, and to the Canoe House at the Mauna Lani Bay Hotel. Although the hotel is swish, the restaurant is quite infor- mal and there were no objec- selection of starters and a glass of wine, good for both wallet and waistline. To make sure we kept in shape we'd walk from our condo, the Aston Royal Sea Cliff, into the village of Kona every morning for coffee at the Lava Java. On our last night we went to the new Four Seasons hotel Pahu I’ — a restaurant, absolutely right on the beach and destined to be everyone’s favorite. If the location is unbeatable the food is equally geod, a clever blend of classic and Pacific Rim dishes. Try the red lentil soup then the shrimp and scallop curry. Best pizza I’ve found on Hawaii was at the Four Seasons’ golf clubhouse. Finally to Kauai with Aloha Airlines, to the ocean- front Aston Kauai Beach Villas and a short drive to the Beach House at Poipu, the latest creation from Jean- Marie Josselin, founder of A Pacific Cafe (also on Maui and Oahu). This is food with flavor, and what else need one say? But there’s more: a beauti- ful restaurant with doors that open wide to bring in the sunset.
