Over 4,000 ranches raise deer that graze on natural grasses, which contributes to the meat's ten- derness and flavour. 1 4 ths. venison % cup red wine ¥ tsp. paprika % cup flour J tsp. sugar 1 tsp. mustard 4 tsp. nutmeg 1 tsp. salt 1 clove garlic 1 medium onion 1 medium green pepper % cup mushrooms 2 cups chicken broth Cut venison into cubes. Place ina casserole dish and ombine all dry ingredients with wine. Pour “marinade” over meat and marinate for 2 to 4 hours.Turn meat ocassionally, Slice onion, green pepper and mushroams aver meat. Pour chicken broth over meat, Cover and cook at 300 degrees F for about 2 % hours or until meat is tender. (If dish starts to dry out, add a lite wine and water). Serves 4 Note: Venison is very lean and should not be cooked as fast or at as high temperatures as beef.
