THE fall harvest season means that for
a limited time home winemakers have an
opportunity to try making wince the way
big wineries do — from grapes and
freshly pressed juice instead of concen-
trate Kits.

People who make their own wine, either at

home or at on-premise winemaking, shops, know
- that while kits make perfectly decent table wines,

there are limits co how long they can last or
improve once bortled.

The difference, explains Don Isaak of Rack It!
Winemaking at Park & Tilford Centre, is the bugs.
“The kits are pasteurized,” Isaak points out.

“They basically have to be ‘cooked’ to stabilize them
and give them a shelf-life. It makes them convenient and
economical, but it is unnatural in the sense chat it stops

a lot of the organic processes which cause wines to
change and improve.” :
