The 80-seat Sicilian-stvle Hralian restaurant
was launched back in Apnl 1997 by the brothers
Caparotta — Piero the congenial front-end mar
and Ezio the passionate chet.

Add in life-long Caparotta amicho and cagle-
eyed dining room waiter Luigi Marchese. Top it
all off with a menu of tinely executed Italian
dishes that bear strong Sicilian sparkle and you
might be tempted to join with Attilio in singing a
few bars.

The fan. 28 Barolo dining school featured all
of the above presented with typical Caparotta
zeal.

Spontaneous song, bursts of flames from the
kitchen, honking horns, laughing Sicilians, tales
of home kitchens with Momma or Poppa rolling
out the pasta or hammering out the veal.

Underlying it all was that wonderful apprecia-
tion for food and family that is such a key ingre-
dient in any quality Italian dining experience.

But back to class and a notebook blotched
with frascati and rosso riserva:

Overriding message from Attilio: simplicity of
approach, freshness of ingredient and spontancity
of innovation.

Take the opening Melanzane Marinared
Eggplant, for example.

Salad simplicity all the way: a side of chopped
radicchio and Romaine lettuce tossed with extra
virgin olive oil and salt partnered with marinated

eggplant. . . .
