alfalfa sprouts and sliced
olives. For added colour use
pimento-stuffed olives.

Once the rice and the
zucchini are cooked, imme-
diately mix them with the
shredded greens.

Pour the dressing over
everything and mix well to
blend.

Serves 4 to 6.

Garlic Herb Dressing

I tsp. garlic

5 Tosp olive oil

2 Tbsp. lemon juice
1 tsp. marjoram

1 tsp. mint

% tsp. thyme

% tsp. tarragon

% tsp. salt

” Pepper to taste

To prepare the dressing,

place all ingredients in a
ow! and briskly stir, or

‘combine all ingredients i ina
blender to mix. Aliow the
‘dressing to sit for at least an
hour before using.

Blushing madly, I looked
around to see if there were
any witnesses to my ordeal,
but thankfully there were

It was cnough of a mess
so that I was forced to aban-
don my walk and make my
way home to clean up for

work. I did so, feeling some-
what discouraged.

OF course, by the time I
was in the shower I began to
see the humour in the situa-
tion. And when I got to
work and relayed my story
to my work mates, I learned
something interesting.
Apparently, when a bird
poops on you it’s a sign of
good luck. OK, I’m a bit of
a skeptic, but no kidding, I
was told this very thing by
more than a few pcople, all
of whom are reasonably

__ intelligent.

Anyway, I haven't given
up on Toben Anderson’s
beautiful thought routine.
When I’m fecling blue,
thinking about the simple
but’ beautiful things in my
day. really does help to make
me feel good about life.
Some days my beautiful
thoughts are as small as the
quiet joy I feel when I'm
outside gardening in the

warm sunshine, my dog
Sophie sleeping in the shade
nearby and birds twittering
in the trees.

Other more hectic days,
my beautiful thoughts may
come in the form of the
relief I feel when my family
is all tucked safely into bed
at night, the house is quiet
and I have a little time to
reflect on how lucky I really
am.
