Durkin said it’s common for bartenders to
give away free drinks to friends or be sloppy
when pouring drinks. Bartenders sometimes
don’t ring in sales so they can pocket the cash.

Durkin — a former bartender — points
out it’s a small percentage of bartenders who
cheat, but added “ir only takes one bartender
in one place to create a big problem.”

software hooked up to a scale, Durkin mea-
sures all the liquor, wine, beer “and coolers in
a bar or restaurant and compares the total to
the cash take.

The numbers are crunched and Durkin
determines the shrinkage. Durkin returns the
next week and performs anorher liquor audit,
which usually rakes one to three hours. After
a couple more audits to get a better picture of
the shrinkage situation, he sits down with the
bar staff and has a chat.

He tells the bartenders what the shortages
are and lets bartenders know they are respon-
sible for what goes on behind the bar.

“T would say generally the i:nprovements
are quite drastic. Any sloppiness gets cleaned
up immediately and if anybody was stealing
they realize someone is watching now," said
