Sure, the old heavy curtains from its Heritage Room predecessor have been drawn to let the glow of the body-conscious stream in from the adjacent fitness centre, but that vista is only of passing interest. Windows throws back the blinds and sheds its purest light on the peculiar magnificence of grand and subtle cuisine. Not the flambees, heavy sauces and sombre atmospheres of what has occupied that definition for so long, but the imagination, vivacity and glorious sense of what can elevate food so far above simple nutrition. In addition to Milligan, the Plaza’s pastry chef Tim Huot adds a special flair and personality to Windows’ breads and crusts and regularly wins awards with his ex- cellent dessert creations. Windows then provides a view of the talents that make it more than just a good restaurant, but an interesting and innovative one. Its concept, Chow says, ‘is to define B.C. cuisine,” by featuring the best of what is produced in the province, but is so rarely celebrat- ed.
