Nice. budget beaters by Barbara McCreadie SE EE Tried another recipe this week that I know you'll like. I know it’s rushing the season, but Christmas isn’t that far away. These would be marvellous to have tucked away in your freezer. This is a food processor recipe but if you don’t have one, grate the cheese, crumble the bacon, use your handmixer or your hands for the rest. Cheese and Bacon Shortbread Y, ib. sharp cheddar ¥, cup margarine 5 slices bacon, crisply cooked Y% teaspoon salt dash of Worcestershire sauce 1% cups all purpose flour \% teaspoon dry mustard Y% teaspoon tarragon Grate cheese in food pro- cessor. Dump it out on a paper towel and change blades to ‘knife’. Return cheese to processor and add butter, salt, bacon and Worcestershire sauce. Buzz off and on until bacon is finely chopped. Add remaining ingredients and process until well mixed and the dough leaves the sides of the bowl — about 15 seconds. Shape into two rolls — about 12” long, 1’’ in diameter and roll in plastic wrap. Overwrap is you're freezing. To serve, slice thinly and bake 8-10 minutes at 375°F. on @ Another pre-holiday freeze-up you might like is this one. Steak Bits in Wine and Garlic 3 tb. sirloin steak, cubed 1°° I cup dry red wine 2-3 cloves garlic, crushed Y: cup margarine salt and pepper 1 tablespoon dry mustard jolt of Worcestershire sauce Marinate the meat cubes in wine and garlic overnight. Drain, reserving marinade. Melt about two tablespoons of the margarine in a large frypan. Brown the meat, a handful at a time, stir-frying until all sides are browned and the centre medium rare. Salt and pepper to taste. Continue, adding margarine as necessary. Remove meat from the pan and add the remaining marga- rine. Stir to remove browned bits from the pan. Add mustard and Worcestershire sauce and about % cup of the reserved marinade. Toss meat in sauce and serve hot in a chafing dish with cocktail picks. I often thread these on skewers with a fresh button mushroom, lightly sauteed in butter. Mouthpainting provides therapy for handicapped “| FELT pretty devastated when [ was first told that | would not get the use of my limbs back,”’ says Cody Tresierra. “But after that i just concen- trated on getting on with my life. I am lucky that | am young, and young people are adaptable."’ An active life that used to he filled with family, friends, sports and hobbies, was suddenly snatch- ed away one summer day in 1979 when Tresierra) of Vancouver became a victim of a motor vehicle accident -- only weeks short of his 19th birthday. Paralyzed from the neck down and dependent on a respirator for breathing, Tresierra spent a brief time in Vancouver's Shaughnessey Hospital, Spinal Cord Unit. From there, he was moved to Pearson Hospital, an extended care facility. REHABILITATION lt was there about four years ago that he was introduced to mouthpainting as a possible form of rehabilitation. Painting by holding the brush or pencil clenched between his teeth at first seemed most difficult. But with the encouragement and close guidance of Betty Black, a local art instructor, Tresicrra replaced the immobile hands with his mouth and gradually became more skilled at his work. “Realizing that painting could be more than just a pastime, but a way in \-ch [ could achieve a sense of personal satisfaction and accomplishment, 1 have exposed myself to various forms of art. My favorite technique, however, is to draw or paint with oils,"" he ex- plains. Tresierra’s landscapes, seascapes and an array of other subjects auger well for a bright future. NEW HOPE Living in a cooperative apart- ment with five others, all of whom have similar disabilities, he reflects on his early days of coping with his handicap: ‘‘My future seemed to be blank. Any hope that i might again lead a normal life seemed out of the question. “Being confronted with total paralysis at the age of 19 brings about many bewildering thoughts,’ says Tresierra, ‘‘but recognition of my art has given me hope again.”’ Tresierra recently joined the Association of Mouth and Foot Painting Artists.
