For the cradle of all North Shore Greek dining is celebrating its 20th anniversary. Pasparos Taverna was born in June 1974, fathered by that restless globe- trotting gourmet Aristedes Pasparakis. lts birth was a wild Greek affair never before seen on the sedate and gastronomically barren North Shore of the early ’70s. its arrival signaled the dawn of a new culinary era locally and the end of the drab two-note dining tune of Chinese-Canadian and straight Diner-Canadian cuisine played for so long in North and West Vancouver. Twenty years on, Aristedes remains in transit, spreading the Greek dining gospel in places in need of Mediterranean warmth and passion; a host of Greek tav- ernas, restaurantes and bodegas dot the North Shore dining map, as do a wide variety of other restaurants from around the globe: and Pasparos soldiers on. Far from withering under the heat of competition or drifting aimlessly into oblivion after the departure of the mercurial Pasparakis, Pasparos has set down deep community roots and thrived. , Its secret to survival is charac- ter and culinary substance. Pasparakis, whose vision always exceeded his immediate grasp and whose restless spirit could not remain seated in one locale for more than a few years, sold the small Greek taverna to Gregory Roumanis in 1978, knowing his restaurant would be in the capable hands of one of Pasparos’ durable and affable waiters. And Roumanis has served the Pasparos credo well. He remains at its helm after 16 years, a mile- stone in itself. But more than merely main- taining the original, Roumanis has ’ improved on it. Pasparos was expanded in 1986. An outdoor patio, an almost mandatory Greek restau- SS party rant appendage, was added ori the occasion of the taverna’s 15th anniversary. Last Christmas, the patio was covered and outfitted with over- head heating, and the restaurant's bar was extended along its east wail. The restaurant now has seating for 170 people, and its original character of informal Greek vitali- ty remains intact. When it is shoulder-to-shoul- der with diners and filled with the infectious whirl of Greek bazouki music, Pasparos embodies the best in Greek dining. Maintaining such continuity over 20 years in the restaurant trade is 2 monumental task. Pasparos’ kitchen, for example, has trained a host of capable per- sonnel who have gone forth and multiplied elsewhere, sometimes in direct competition with the riginal.
