It’s unique — 1 could honestly eat it six meals in a row but I rarely make it. Not one of my kids will touch hash in any form, not even this splendid version. I'd love to know where the recipe originated. I’ve got it on a tattered clipping (mag- azine variety) and although I'd looked high and low for it, P'd misplaced it for prob- ably five years! Discovered it by accident the other day, pasted in the back of a cookbook | rarely use. The original says ‘‘Serves 4" but I've got that scratch- ed out and ‘‘makes a bloody ton’? written in ink. Comed Beef Hash Percy 2 cups corned beef, chunked 3 cups potatoes, boiled and cubed 2 cups green cabbage, chopped and blanched 1 cup onion, sliced Y2 cup beer 1 tsp. each, salt & garlic powder Y tsp. each, pepper, dry mustard and thyme (note: I use less mustard — it’s quite potent) Use the best corned beef you can find, either bought or made yourself. The cann- ed variety will work but the end result is never as good. Bianch the cabbage to set the color. Use red-skin potatoes — they'll hold together. Reserve the beer and mix everything else together. Stir-fry, a little at a time on high heat until potatoes are browned. Pack into a greas- ed paa, sprinkle the beer on top and bake, covered, in a hot oven until heated through and the cabbage is tender. Serve with eggs — fried, poached or scrambled. i aed Tomatoes are down in price just now and some lucky cooks who have a home garden will have their own beginning to ripen. I must confess, canned tomato soup is one of my least favorite foods but homemade, especially this recipe, is a treat. This freezes well but reheat it very slowly as it can separate. The recipe makes about 10 servings. Tomato Soup 8 Ibs. fresh tomatoes 1 onion 4 ribs celery with tops handful fresh parsley 1 bay leaf 6 whole cloves 1 tbsp. salt M% cup each, butter, four and browz sugar Crush the tomatoes and bring to a boil with the next seven ingredients. Simmer gently for two hours. Press the tomato mixture through a sieve and set aside. Melt butter, stir in flour and sugar and blend well.
