When we first moved to the North Shore, over 20 years ago, we had thickness, turning half way through. Baste frequently with lemon-butter sauce - the juice of half a lemon mixed with 2 tablespoons melted butter. Serve with creamed potatoes and green peas. Beefsteak tomatoes are just 59€ a pound this week at Stongs. One of our favorite salads is so simple: Layer slic- ed tomatoes and omions in a salad bowl. Dressing: Mix | part vinegar to 2 parts oil with a hefty shake of garlic powder and mixed Italian herbs. Use a glass jar with a lid so you can shake the mix- ture well. It improves on standing so make it up a cou- ple of hours before dinner. Pour over the tomatoes and onions and top with chopped parsley. The same _ dressing is delicious on a salad | call Spanish Toss - because it was the house salad in a small restaurant we loved on a visil to Spain. Toss together 2 cups assorted fancy lettuce and a sliced English cucumber. Add atin of white tuna, drained and coarsely broken and a un of drained green beans. Just before serv- ing, add about '2 a cup oll and vinegar dressing and gar- nish the bowl with croutons, hard-cooked egg quarters and black olives.
