It’s true that many of these fruit crops are to some extent dependent on honeybees for pollination. Unfortunately, last year and this year the provin- cial bee population has suf- fered set backs because of the deadly Varroa mite. Let’s hope prices will remain stable for the season. The production of straw- berries ranges between 6 to 15 million pounds annually, with more than 50% of the crop utilized for canning or freezing. Apricots are high in Vitamin A and C and are a good source of potassium. The annual B. Ce crop is 5 mil- lion pounds with the retail value of 4 to 5 million dollars. Plums and prunes are high in sugar, a plentiful crop with a§ to 8 million-pound crop a year. Their retail value ranges between 3 to 4 million dollars. The recipes this week have a distinctly European charac- ter. Each employs slightly dif- > ferent pastry and cake meth- ods. All are rich and delicious. A small piece is more than adequate for afternoon tea. All three slices keep well — in warm summer weather they should be kept refrigerated or in cool dry place.
