SUMMER baking
recipes should take
advantage of the won-
derful berry and tree

- fruit crops in Western
Canada.

It’s true that many of these
fruit crops are to some extent
dependent on honeybees for
pollination. Unfortunately, last
year and this year the provin-
cial bee population has suf-
fered set backs because of the
deadly Varroa mite. Let’s hope
prices will remain stable for
the season.

The production of straw-
berries ranges between 6 to
15 million pounds annually,
with more than 50% of the
crop utilized for canning or
freezing.

Apricots are high in
Vitamin A and C and are a
good source of potassium.

The annual B. Ce crop is 5 mil-
lion pounds with the retail
value of 4 to 5 million dollars.

Plums and prunes are high
in sugar, a plentiful crop with
a§ to 8 million-pound crop a
year. Their retail value ranges
between 3 to 4 million dollars.

The recipes this week have
a distinctly European charac-
ter. Each employs slightly dif-

> ferent pastry and cake meth-
ods. All are rich and delicious.
A small piece is more than
adequate for afternoon tea.

All three slices keep well —

in warm summer weather they
should be kept refrigerated or
in cool dry place. Enjoy them,
thet are easy to make and
wonderfull to eat.

Fresh Plum Squares

Pastry bottom:

200 g all-purpose flour

150 g icing sugar

150 g butter or margarine
(unsalted)

200 ml, ice cold water

Plum filling:

700 g fresh B.C. blue plums
(pits removed, cut into 4
segments)

100 g granulated sugar

The peel of one large lemon,
grated

200 mL plain yogurt

<mmet jumbo egg

150 g all-purpose flour

Topping:

40 g all-purpose flour

5 mL ground cinnamon
20 mL butter

250 g granulated sugar

emme 90 g almond slivers

Select a stainless steel bow!

You may add a little salt to
taste — but try the recipe with-
out salt sometime. Add butter

Mix together the plum
Pieces, sugar, and the grated
lemon rind.

Sprinkle over the baked
pastry evenly.

Mix together the yogurt,
flour and egg.

Pour over the plums.

Now mix the topping — all
the ingredients, except the
almonds.

Sprinkle on the topping and
finally finish with almond stliv-
ers on the top.

Bake in a 350 F oven for
about 30 minutes.

Cool.

Cut into squares. Each
square has about 620 calories.

Apricots in a Sponge

50 aL i icing sugar

75 mL mu pastry (cake flour)
100 mL

100g margarine or butter
200 g apricot jam

10 mL bakin powder

5 mL ground cinnamon

salt to taste

500 g apricot halves (no pits)

Select a medium size bak-
ing pan, brush with melted
margarine and dust with flour.
Preheat oven to 350 FE.
Separate the eggs. Whisk
together the yolks, cinnamon,
sugar, baking powder, and salt
if desired. Beat the egg whites
to a stiff stage. Slowly add and
fold into the yolk mixture. Mix
in the apricot jam, (if thick,
mix with a little water until
smooth). Now pour the mix-
ture into the baking pan.

Place the apricot halves on
top, skin side up, press into the
mixture gently.

Bake in the oven for 20 to
30 minutes.

Cool before slicing.

This recipe should yield 12
to 14 slices. Each slice has
about 850 calories.

Strawberry Meringne

- July 5

380 g pastry flour

5 0 g margarine

4 g icing sugar

40 mL ‘7% sour cream

8 g baking powder

300 4 fresh 1 B.C. strawber-

200 g granulated sugar
2. large eggs (separate, two

yolks, and whites)

Sift together flour, icing
sugar, and the baking powder.

Crumble in margarine. Mix
egg yolks and sour cream, add
to the flour — work into a
smooth pastry. Press aoe p

Serve
slices for tea or for a lunchtime
