Vivace! has also reunited Mario
Corsi with Gamal Hanna, the affa-
ble and versatile Corsi alumnus
who left the Corsi fold in 1989 to
found Salute in West Vancouver.

Hanna is now in charge of
Vivace!, Corsi Trattoria and Salute,
which has been brought into the
family of fine Corsi restaurants
along with its owner.

It is a combination whose ingre-
dients resulted in a winning formu-

_la at Corsi Trattoria and bodes well
for Vivace!.

Chef Phil Heise presides over a
wide-ranging menu that bears Corsi
influences and ingredients from
Corsi Trattoria, Quattro, Salute
and Cafe Roma.

Appetizers and salads ($4.50 to
$9) include crostini, various
carpaccio combinations, fresh
grilled seafoods and small pasta
dishes. Enough variety and depth
for a good mix and match meal.

The main dinner menu ($11 to
$18) is broken into three sections:
pasta (about 20 variations — from
Penne Arrabbiata to Fusilli
Genovese and Gnocchi Lombardi);
char grill (seven chicken, fish and

_ ted meat dishes); and entrees
(seven variations, including
‘Scaloppine Marsala, Pollo Picante

and Filetto Etrusca).

bottles. Corsi has also wisely
included 10 interesting selections
by the glass ($4.50 to $7.25).

The Insalata Fantasia sampled at
a recent visit combined grilled scal-
lops atop spinach, julienne carrots,
pancetta bacon with a dressing of
balsamic vinegar. olive oil and
lemon juice.

Our main meal was made up of
selections from the restaurant's
appetizer list and were all excel-
lent. Gamberi Alla Griglia featured
a quartet of grilled prawns atop
sun-dried tomato aioli. The risotto,
meanwhile, was finished in saffron
and roasted red pepper.

Service was attentive and pro-
fessional.

Vivace! is too young yet to have
established a distinctive personali-
ty. but the ambience generated by
