Good food and fine courses welcome visitors to the Scottish hills

And so to Scotland, a rental car
at Glasgow airport, and off on the
high road. The mighty fortress of
Stirling Castle loomed fron: the
midday haze, and soon the ancient
city of Perth drew us in.

This is a place to walk back in
time, to admire a church's crown
spire, to gaze at the River Tay
flowing by handsome parks, see a
performance at the Perth Theatre,
and take the short drive out to
Scone Palace, where Scottish
kings were crowned.

Another diversion was the golf
course of Murrayshall, where

play the beautiful parklands
course, but can also dine in state
at the country house hotel.

We stayed at a hotel called the
Parklands in Perth, a handsome
building that used to house the ci-
ty’s lord provost.

it was our introduction to a
consortium called Scotland’s
Commended Country Hotels and
Inns, where the accent is on per-
sonal management but without
any Basil McFawltys.

Guests at Parklands share an
elegant house as if they were at a
house party, while lingering at
dinner is like an Edwardian feast.

Good food is a feature of fine

delicious, cool, water and drinking mugs,
thoughtfully provided by the woman in
the nearby cottage. 99

Scottish hotels, most often local
fare such as beef, lamb, venison
and salmon carefully prepared to
bring out natural flavors without
too much garnishing.

We also had a fine meal at
nearby Nivingston House, where

as much care went into the pres-
entation: the handsome room, the
linen, fresh flowers, candles, and
service by people who knew what

they were doing.
