Perennial blossoms of the common dandelion abound and are regarded as a neighbourhood pest. But, with little work you can produce a delicate flavoured light wine with a hint of spring on a an 7 the aroma — a lovely reminder of summer past when this wine will be ready for your table. We are offering three basic ingredient recipes which employ the ubiquitous blossom. The dandelions should be gathered on a dry sunny day. You only want the flower petals (no green calyces) and these are best separated with scissors — so here’s a neat activity for Toby Taylor _ the kids on the next sunny Saturday. Brewmaster GERMAN MOSELLE-TYPE BORDEAUX GRAVES-TYPE LOIRE-TYPE (White) Ingredients: 17 litres (3 pt.) dandetion petals Ingredients: 1.1 litres (2 pt.) dandelion petals ingredients: 11 litres (2% gal.) dandelion petals 570 mi (1 pt.) white grape concentrate 900 mi (2 Ib.) sultana raisins 4.5 Kg (10 Ib.) suitana raisins 675 gm (1 tsp.) acid blend (R) 20 gm (5 tsp.) acid blend (R) 11 litres (2 pt.) white grape concentrate ‘a tsp. yeast nutrient 900 gm (2 Ib.) honey 1.8 Kg. (4 ib} honey 1 pkg. champagne wine yeast Ye tsp yeast nutrient 90 gm (3 tsp.) acid blend (R) Water to 45 litres (1 gal) 1 pkg. all purpose wine yeast 1 pkg. champagne wine yeast poo 2 crushed Campden tabiets Water to 4 5 litres (1 gal.) Water to 5 galions (1 gal ) 2 crushed Campden tablets 10 crushed Campden tablets The wine may be matured for a month or so in cask or for 6-12 months in bulk in glass before bottling. It will then continue to improve in bottles for some time but should be fully mature at an age of two to three years. The Method for processing all petal wines is similar, and requires a modest understanding of basic winemaking. We will be pleased to pro- vide complete advice and assistance and the method for each of the above recipes. We would recommend that you review the complete stock of wine and beer making books which we stock for the beginner to advanced hobby brewer.
