Terrific as a fall or wintertime treat, and wonderful with a mug of hot ap- ple cider or cocoa now that holi- day time is upon us. Yields 12 giant or 24 regular- sized muffins. (Recipe may be halved.) 34% ¢. (875 mL) unbleached flour 2 tsp. (10 mL) baking soda 1% tsp. (7 mL) baking powder 1% tsp. (7 mL) salt 1 tsp. ( mL) cinnamon V2 tsp. (2 mL) cloves V4 tsp. (1 mL) nutmeg 1 tsp. (5 mL) ginger te. (250 mL) buttermilk ¥ ¢. (150 mL) canola or -sunfiower oil 4 large eggs 2 ¢. (500 mL) cooked pumpkin (canned or home pureed) 1% c, (375 mL) honey ¥% e. (50 mL) unsulfured molasses le. (250 mL) Thompson raisins icing sugar (optiona}) Preheat oven to 375°F (190°C). _Grease muffin pan or pans, or prepare with paper liners. In large mixing bowl, combine the flour, baking soda, baking powder, salt and spices. In another. .bowl, combine the buttermilk, oil, eggs, pumpkin, honey and molasses. Add mixture - to the dry ingredients. Mix only briefly, just enough to incorporate fully and evenly. Add the raisins and stir until evenly distributed. Fil muffin tins “full. Bake approximately 35-40 minutes, or until muffins spring back when lightly pressed on top or test clean when thin wooden skewer is in- serted, Cool muffins. Sprinkle with i¢- ing sugar, if desired. MAPLE SYRUP SHORTBREAD WITH NUPFS This unique shortbread, fla- vored with pure maple syrup, is an annual Christmas favorite at Capers. Yieids 35 cookies. ¥: pound (250 g) butter, softened Yc. (125 mL) cornstarch 2¢. (500 mL) unbleached flour Y ¢. (125 mL) pure maple syrup Yr ec. (125 mL) finely ground pecans, almonds or other nuts Cream together the butter, cor- nstarch and flour in a large bowl. Beat with a hand mixer on low speed and add the maple syrup just until the liquid is integrated. Add the ground nuts. Roll the dough into logs 24% 10 3 inches (6-8 cm) in diameter. Cover logs with clear plastic wrap or waxed paper to seal. Chill several hours. or overnight. Remove dough from refrigerator and allow to soften slightly. Preheat oven to 350°F (180°C). Slice dough into disks inch (1-2 cms) thick. Place cookies % inch (1 cm) apart on greased (or parchment- lined) baking sheets. ; Bake cookies 25-30 minutes un- til pale golden. Remove to wire rack to cool completely before storing in air- tight container. (75 mi) fiaely chopped REAT BRIZ walnuts Cocoa powder or icing sugar Place chocolate, butter, egg yolk and rum in a bowl set over (not touching) simmering water.
