Speaking of something hot in
the oven, thank God someone in-
vented casseroles. One-dish meals
are such a cook-saver. This is an
unusual mixture but tastes great.

Chicken with Clams
and Vegetables
4 chicken breast halves
1 tin beby clams with juice
1 sms} banch broccoli,
removed (use in broth)
16-inch zucchinl, sliced
YA Ib. button mushrooms
Ys cup butter
1 package Mayacamas Creamy
Clam sauce mix
coffee cream
2 cups cooked pasta shells
% cop batter
1 cup fine, dry breadcrumbs
4 cup grated Parmesan cheese

Steam breasts gently in a little
water until just tender. Include the
broccoli stems in the pot for fla-
vor

Skim fat from broth and strain
out broccoli. Set chicken and broth
aside.

Steam broccoli, zucchini and
mushrooms in butter until crisp-
tender. Lift out vegetables and set
aside with the chicken.

Measure % cup chicken broth
into a two-cup measure.

Drain claim juice into the
measure and add coffee cream to
the 1% cup level.

Pour into pan you used to steam
vegetables and butter. Stir and
heat. Add sauce mix.

Combine chicken, vegetables,
sauce and drained clams with
cocked pasta in a two-quart casse-
role, adding additional coffee
cream if mistture seems dry.

Melt butter and add crumbs and
Parmesan cheese. Sprinkle on
pasta mixture and bake at 350F
until browned and bubbly, about
45 minutes.

Some pastas absorb more liquid
than others so check that this dish
isn’t getting dryer than you'd like.
If so, pour a bit more cream into
holes through the topping.
