Cheap clams, fizzy pastry

Don't drain them. Add the
clams, both kinds of milk
and butter. Bring to near
boiling but don’t boi]. Mix
the cornstarch with a litte
water and add - more if you
like thicker chowder, Serve
garnished with lots of parsley
and the ham or bacon.

1 often add a pinch of tar-
tagon or ¥% teaspoon mixed
Italian herbs but it isn’t
essential. The canned milk is
the secret - it enhances the
flavor and makes the
chowder creamy.

I've had a poor record
when it comes to making
pastry. My middle daughter
handles the chore around
here and I’ve printed her
recipe for Foolproof Pastry,
Now I've developed this
recipe that makes terrific
pastry - it handles easier than
the regular stuff but tastes
just the same.

Fizzy Pastry
2 cups a.p. flour
¥s cups shortening
1 teaspoon salt
5 ounces club soda
(fresh, riot flat)

Cut the shortening into the
flour and salt until you’ve got
no lumps bigger than a grain
of rice. Add the club sada all
at once and stir with a fork
until the mixture forms a
tall. Makes enough for a
2-crust pic.
