Every two years chefs from 22 countries gather to compete in Lyon, France — the home of Paul Bocuse, known to many as the pre- eminent originator of Nouvelle Cuisine. Working under a time limit, they prepare platters for 12 people using featured ingredients, all in front of an audience of thousands. Dishes are judged on flavour, presentation and _ Originality. In January 2001, Vancouver chef Christopher Mills will represent Canada at the Bocuse d’Or. His day job is product development chef for Jocy’s Mediterranean Grill, which falls under the Earl’s group of restaurants. In fact, he’s been practising for next year’s Vancouver Earl's Restaurant under the cagle cye of Michael Noble, Past Bocuse d’Or competitor and execu- tive chef of Diva at the Met. Last month he won the “Springboard to Lyon™ competition at the National Restaurant Show in Chicago, where he was pit- ting his skills against the American and French com-* petitors for the Bocuse d’Or 2001. And next Thursday, June 22, he'll be showing off those skills for participants at an Ambrosia Adventures in Cooking class in West Vancouver.
